Steve Ferrin, one of two founders of Sostanza sits down to discuss the life of his business and how it evolved after purchasing it from the last owners. Sostanza, a Mississauga-based Italian market and eatery open from 2004-2007, describes their smaller-scale business as a spot for Italian cuisine, priding themselves in its production using the most authentic ingredients possible. Ferrin speaks about the difficulties of sourcing these quality ingredients and the dedication they had to such, despite the incur of costs associated. Seeing that Sostanza took over Presto, an Italian restaurant in the business for over 20 years, it was a shock to the Ferrin cousins who had to remodel their budget to ensure no corners were cut when serving the central Mississauga population. The name of the business, the quality of food, and more, were all rooted from their Northern Italian heritage, and the values they learned growing up as second-generation Canadians.
